Chickpea Salad Sandwich

Makes 6 - 8 sandwiches

Ingredients

2 stalks of celery, roughly chopped

1 stalk of green onion, white end trimmed

1/3 cup vegan Mayo (I love Follow Your Heart brand)

3 Tbsp mustard

1/2 tsp Salt

1/4 tsp pepper

1/4 tsp Garlic powder

1/2 tsp dried dill

Pinch of Cayenne, optional

1 Tbsp lemon juice

2 14.5oz cans of chickpeas, drained and rinsed

Bread of choice

Directions

Add celery and onion to food processor and process to mince. Add the rest of the ingredients (reserving about 1/3 of the chickpeas to keep a somewhat chunky texture.) Process just till combined, trying not to over process. Scrap down the sides as needed. Add the rest of the chickpeas and pulse a few times to combine. Taste and adjust seasonings to your preference. Serve with your favorite bread, toasted or not!
