The Best Meatless Loaf

Ingredients:

Meatloaf:

1 14.5oz can lentils, drained & rinsed

1 cup breadcrumbs


1 cup oats


1 small zucchini, grated

1 small onion, finely diced

4 cloves garlic, minced

1 carrot, grated


1 celery stalk, finely chopped


1 8oz can tomato sauce


2.5 Tbsp tomato paste


1 Tbsp soy sauce


2 Tbsp Worcestershire sauce

1 tsp dried thyme


1 tsp dried oregano


Salt & pepper (or Cajun spice blend) to taste

 

Glaze:

1/2 cup ketchup


2 Tbsp maple syrup

1 Tbsp Dijon mustard

 

Instructions:

1.     Preheat your oven to 375°F


2.     In a large mixing bowl, combine the breadcrumbs, oats, zucchini, onion, garlic, carrot, celery, tomato sauce, tomato paste, soy sauce, Worcestershire sauce, thyme, oregano, salt, and pepper. Mix well until all ingredients are evenly combined

3.     Fold in lentils until combined


4.     Transfer the mixture to a greased loaf pan

5.     In a small bowl, whisk together the ketchup, maple syrup, and Dijon mustard to create the 
glaze. Spread evenly over the top of the loaf. 


6.     Bake in the preheated oven for about 50 - 65 minutes, depending on oven, or until the top is browned and edges look crispy.

7.     Allow the meatloaf to cool for a few minutes before slicing and serving.
