Strawberry, Zucchini and Cream Oats

Serves 1

Ingredients

2/3 Cup water
1/2 tsp vanilla extract
1/4 tsp salt
1 tsp chia seeds
1/3 cup old fashion rolled oats
1/4 of a large zucchini, grated
1/3 cup (plus more for topping) strawberries, diced
1/3 large banana (plus more for topping) banana, thinly sliced
1 Tbsp lemon juice
1/2 Tbsp chopped walnuts
1 Tbsp hemp seeds
3/4 tsp maple syrup
For serving:
1 Tbsp unsweetened coconut (or other non-dairy) yogurt
1/2 Tbsp ground flaxseed
Sliced bananas and strawberries

Directions

In a small saucepan over medium heat, add water, vanilla, salt, chia seeds, and oats. Cook for about two minutes to start softening the oats.

Add zucchini, strawberries, banana, lemon juice, walnuts, hemp seeds, and maple syrup. Stir well and cook until thick and soften. (I sometimes add a splash of water to help meld together.

Remove from heat and let stand a couple of minutes.

Transfer to a bowl and stir in ground flaxseeds and yogurt. Top with banana and strawberries.
